I almost bought the Zen Panda Soy Puddings they have at Whole Foods, but I really wanted rice pudding (and they only had banana or chocolate). It occurred to me that I must have the ingredients in the house to make my own rice pudding, although I have never made a pudding that wasn’t from a box before (and even that was probably 20 years ago). Since Lilia can’t have milk, I googled vegan rice pudding recipes, and made this one. Well… hmmm. It is sorta like our morning oatmeal, but sweeter. It isn’t creamy like rice pudding. It tastes good, and we all liked it, but it’s not what I wanted. I checked out Christy’s website, and I see this recipe that looks extremely creamy. But it uses half and half. Note that in the vegan recipe, it called for 3 and 1/4 cups of liquid (2 cups of water, 1 1/4 cups of a fake milk) and 1 cup of rice. Christy’s calls for 5 cups of liquid (half and half) and only 2/3 cups of rice. I wonder if I could just substitute rice milk for the half and half? Or should I buy soy creamer? Thoughts?? Any other recipe suggestions? We are okay with eggs– just no cow’s milk or cow’s milk products.

Oh, my lovely Laura, you’ve offered me something worth its weight in gold: A CHALLENGE!! I’ve never made rice pudding with soy milk - never even thought of it to be honest (b/c I never had to) but now I shall try. Woohoo! Wish me luck!

That would be awesome! I plan on trying again with lots more rice milk, but we still have some of the first batch. Maybe in a few weeks.
If Lilia can handle it, coconut milk makes rice pudding really creamy.

I will have to see if coconut is something she should avoid (since she has one allergy, they say to be cautious about other allergens too).
Yumm….rice pudding. I would go for the … do they make a rice milk creamer? It’s just that the soy has such a strong flavor. Though if you add enough spices and raisins it might work.

I don’t think they do make a rice creamer. But maybe just a lot of rice milk would help make it creamier. The thought of using 3 containers of soy creamer just doesn’t sound appealing.
Hi I just was checking this out for the first time.
My suggestion would be to start off making a risotto (just rice, water, and time), but then making it sweet with some sugar/maple syrup/honey, vanilla, cinnamon, and adding a little bit of soy milk for some added creaminess. I have no idea if this would work, but it’s just an idea. I might try to do it myself. I like experimenting.

Laura, I developed a soy milk rice pudding today. Going to type it up now and should be on the site this week. Hope you enjoy it! xo
